Saucers are an integral part of any classic coffee and tea service, ensuring an appealing presentation of coffee, cappuccino, espresso or tea in restaurants, cafés and hotels. Depending on the size of the saucer, there is also space alongside the cup for a coffee spoon, a sachet of sugar or a small biscuit. What is the purpose of a saucer?

In many service concepts, saucers are an essential companion to a cup of coffee or tea. These small plates fulfil the following functions:

Protection for the table & table linen: If coffee or tea drips from the cup while pouring or drinking, the liquid is caught by the saucer. This protects the table surface and table linen from stains. In hospitality settings in particular, this helps avoid frequent changes of tablecloths.
Serving aid: Saucers make it easier to serve hot beverages. The cup, spoon and sugar can be brought to the guest together and cleared away just as easily. At the same time, the saucer serves as a rest for the used spoon.
Design element: Saucers complete your place setting and ensure that coffee and tea specialities are presented in a professional manner.

The right saucers for every cup

Not every saucer suits every cup. The key factors are the diameter of the saucer and the size of the recess or footprint in the centre, which is often present. The base of the cup should sit securely within it, without too much play.

When purchasing, therefore, make sure that saucer and cup are compatible with each other. Models from the same tableware series offer a particularly straightforward solution, as dimensions and design are generally coordinated. Depending on the beverages offered, hospitality businesses will need different sizes for coffee, cappuccino, espresso or tea.

Coffee saucers

A coffee saucer is designed to match classic coffee cups or coffee mugs. It provides the cup with a secure resting place and leaves enough room alongside for a coffee spoon. Coffee saucers are equally suitable for restaurants and cafés as they are for hotel breakfast service. Coordinate the saucers visually with your coffee cups and the rest of your tableware. This creates a consistent place setting that works from breakfast right through to afternoon coffee.

Cappuccino saucers

Cappuccino cups are often somewhat wider than classic coffee or espresso cups. The cappuccino saucer should be sized accordingly. A suitable footprint ensures that the cup can be placed securely on the saucer. Depending on the model, there is space around the cup for the spoon or a small accompaniment such as a biscuit.

Espresso saucers

Espresso cups are compact – and, to match, espresso saucers are usually smaller than saucers for coffee or cappuccino. The footprint should be matched to the comparatively small base of the cup so that the espresso cup stands securely. An espresso saucer also offers space for the small espresso spoon and, depending on the design, for a sugar sachet or a small biscuit.

Tea saucers

Tea cups are traditionally combined with a matching saucer as well. Particularly in a stylish tea service in a hotel, café or restaurant, this combination supports an elegant presentation. Alongside the cup, the saucer can also serve as a rest for the teaspoon.

When selecting, the saucer should be matched to the shape and diameter of the respective tea cup. Especially for an extensive tea service, it is a good idea to choose cup and saucer from the same tableware series and complement them with a matching teapot.

Which materials are typical for saucers?

Classic saucers are usually made of porcelain, making them versatile companions for coffee, espresso, cappuccino and tea cups. Depending on the tableware concept, saucers in earthenware or stoneware may also be a suitable option, adding distinctive accents through characteristic glazes and surfaces, for example.

Which material is best suited depends primarily on the cups being used. Ideally, you should coordinate material, design, colours and size with one another. For everyday use in the hospitality industry, alongside visual appeal, the specific product properties should also be taken into account – for instance, suitability for dishwasher cleaning.
