Vegan zucchini chutney
Ingredient list
You will need these ingredients for this:
1 kg zucchini
250 g onions
1 red pepper
1 yellow bell pepper
250 g jelling sugar (3:1)
250 ml white wine vinegar
10 g curry powder
10 g mustard seeds
Salt
Pepper
And this is how it works:
- Clean zucchini and coarsely grate or finely dice. Then mix in a bowl with 40 grams of salt and let stand for 30 minutes. Drain the water and rinse the zucchini under cold water. Then pat dry well.
- Finely dice the onions and slit the peppers lengthwise, remove the seeds and chop finely. Clean and finely dice the peppers.
- Mix the prepared ingredients with jelling sugar, white wine vinegar, curry, mustard seeds and some salt and pepper in a pot. Bring to a boil and simmer uncovered over medium heat for 30 - 35 min. Stir frequently and season if necessary.
