Roasted asparagus with avocado, tofu & chili soy sauce

Ingredient list

For the chili soy sauce

1 shallot
1 chili pepper
1 tsp. sunflower oil
1 tbsp. maple syrup
2 tbsp. soy sauce
1 tbsp. sesame oil (roasted)
1 tsp. lime juice
Black cumin, salt, pepper

For the asparagus and tofu

4 spears green asparagus
1 tablespoon olive oil
100 g tofu
1 tablespoon flour
1 tablespoon sunflower oil
½ avocado
Cress, salt, pepper

How to do it:

Chili soy sauce

  1. For the sauce, peel the shallot and chop very finely.
  2. Remove the seeds from the chili pepper, clean it and cut it into very fine cubes - it is best to use kitchen gloves for this - and then sauté it with the shallot.
  3. Mix the lime juice with maple syrup, soy sauce, black cumin and sesame oil.
  4. Stir in the shallot and chili pepper.
  5. Finally, season with salt and pepper.

Asparagus and tofu

  1. Rinse the tofu, pat dry and cut in half.
  2. Then roll in flour and fry with olive oil in a pan until golden brown.
  3. Add the avocado to the pan and fry as well, then keep both warm in the oven.
  4. Peel the lower third of the asparagus, cut off the ends and finally fry with oil in the pan.
  5. Finally deglaze with the sauce and serve everything together.
